Stephen J. Brady STOP Hunger Scholarships 2011

Last week Sodexo honored students who are helping to eliminate hunger in the US with five Stephen J. Brady STOP Hunger Scholarships, a program of the Sodexo Foundation. 

The scholarship recipients each receive $5,000 for their education as well as $5,000 in their name for the hunger-related charity of their choice.  Two of the recipients of this year’s scholarship, Amy and Emma Bushman are elementary students in Ohio who have been volunteering since they were four years old. If you have a few minutes have a look at their story below.  They’ll make you smile. 

Amy and Emma first started at Bethany House Homeless Shelter with their mom and later they started their own non-profit organization, Bake Me Home. Every month, Bake Me Home organizes at their local church to fill jars of cookie mix and tote bags of baking supplies with a gift card for families moving out of the shelter. To date, they have over 100 volunteers, have raised more than $35,000, and help more than 200 families every year.

My daughter made Amy and  Emma’s special Bake Me Home recipe this weekend for her dad on Father’s Day and at the same time she also made several extra batches for the dads in our local homeless shelter. I volunteered to be her trusty assistant and of course taste tester.     

Bake Me Home Oatmeal Chocolate Chip Cookie Recipe

Ingredients:
1 1/3 cups flour
½ teaspoon baking soda
1 teaspoon salt
½ cup sugar
½ cup brown sugar
½ cup oatmeal (quick oats)
1 teaspoon vanilla extract (or 1 Tablespoon vanilla powder)
2 eggs
1 stick melted butter (but not too hot!)
1 cup chocolate chips

Directions:
Preheat oven to 375 degrees. Mix all ingredients together with a large spoon. We have found that our recipe works best if you mix the dough by hand rather using an electric mixer. Drop spoonfuls of dough onto ungreased cookie sheet.  Bake for 9-12 minutes. Makes approximately 2 dozen cookies.
